“The restaurant business is in my blood” says ‘Chef Max’ Ellinger, who recently opened his Custom Café & Catering business at the southeast edge of the Blind Pass Bridge.
Max’s business plan calls for serving an awesome breakfast and lunch, from 7 am – 2 pm, indoors and out, every day of the week, “at least through season” and to offer catering in the afternoons and evenings.
After arriving from Syracuse NY on New Year’s Day 20 years ago, Max was the first chef at the Blue Parrot, served as saucier chef doing caterings at Mazzaro’s, spent four years cooking at Ferg’s, with the Rays and some “Monster Events.”
Two years ago Max started custom catering. “ I have a number of weddings booked, but I can handle a lot more, and I am fully equipped and have staff ready to serve” says Max. “I can cater parties up to 25 in house, and up to 250 or even more, anywhere in Tampa Bay.”
The Custom Café menu contains all of your breakfast favorites from oatmeal and fruit to omelets, scramblers, benedicts and homemade biscuits, muffins and hashes, priced reasonably $5-$9.99. Lunches include a healthy variety of salads with or without protein added, and some interesting sides, plus the areas favorite sliders pulled pork, egg salad, chicken salad, burger and ‘sunrise sliders’ as well as a “Slider of the day.”
The location is spotless and his food is getting great reviews. The eggs benedict are the “best this side of New Orleans.”
